I have never used jira

I'm assuming you are referring to Jira Software, if this is the case I would recommend checking out this article, https://www.atlassian.com/software/jira/guides/getting-started/basics . It gives a really good overview of the system and some first steps to start doing.
Personally, I would recommend just playing around in the system. Create a test project to mess with the functionality. When we first rolled it out we left workflows/processes super generic until we could iterate to better-defined processes and procedures.
