How can I edit the end date of a sprint after completing the sprint?

Not possible using the UI. You might change the database directly, while that is not recommended.

you can used the below api

put jiraserver/rest/greenhopper/1.0 /sprint/{spinrtID}

parameter : name=Iteration 2, id=337, startDate=12/Mar/14 8:13 AM, endDate=25/Mar/14 8:13 AM
