On a board when I put custom fields on a card but then make a new card and need different custom fields it changes the custom fields on the other cards. Is there a way to have different custom fields on cards on the same board?

The only way to get different fields on different cards is to connect the custom fields to different Issue Types (you do that under Configuration for each custom field).
How do you configure a custom field?
You have to be a Jira Administrator - then got to Settings > Issues > Custom Fields.
Search for the custom field you want to change, then click on the 3 dots to the right. Select Configure.
