Can I build iOS project on Bamboo server that was installed on Windows machine? Do I need a remote agent working on o Mac?

Yes, you can and yes, you need a remote agent on a MAC to be able to use the OSX environment and tools to build/test your application.
Bamboo could be running on Linux or on OSX too, what matters for your build is the agent where it is running.
