So far, i looked at
/deploy/projectVersioning/{deploymentProjectId}/variables
/deploy/version/{deploymentVersionId}/status
/deploy/project/{deploymentProjectID}/versions
deploy/environment/{environmentID}/results
but nothing seems to have the build number

I believe you are correct in that there is no direct way to get a build number from the release version of a deployment project/environment.
Can you please provide a bit more detail about what you are trying to accomplish?
There might be alternative ways to get to the same results.

I am trying to fetch the list of commit went in the release and also the corresponding JIRA issues
Something like a diff from the last release and current release
I get commit and issues from this /plan/plankey/buildnumber.
How do I know what is the build number used in the release
