Why don't the training tutorials match my experience as I step through them?

On the System Dashboard, I clicked the JIRA USER'S GUIDE to step through the user materials and tutorials - most of the directions/steps don't match what I see on my screen - how/why? And what can I do to get a solid tutorial, to learn how to use Jira?

Just ensure you select the correct Jira version you have - Server or Cloud. This can be selected in the top-right hand corner
