Can someone tell me where the data will be stored in Jira if we decided to use the cloud product please.
In the data centre that Atlassian runs Cloud out of that is nearest to where your initial users started using it. They are in the Republic of Ireland, Frankfurt, Singapore, a couple of places in the US and Australia

You can have a look at Atlassian Infrastructure pages, it will give you a hint of the locations where your data could be stored once you get a Cloud Instance. However just as @Nic Brough -Adaptavist- mentioned, these regions are auto selected based on where you initially registered the instance.
