Where can I find a list of fields that are available with definitions

I'm working on migrating from Jira data center to Jira cloud and we want to do an exercise where we have a list of all the fields available with definitions so that we can create a matrix of sorts where teams will mark shared fields for issue types to assure no data loss as we consolidate projects. I thought Jira would have this sort of documentation but it seems they do not? Is there a way to export from the system?

At a very high level, Jira has three "types" of field that you will need to consider.

System fields like Summary, Description, version, component, resolution, etc (and project, status, and issue type, which are not really fields, they are structural or display attributes that look like fields when you are reporting or searching)
Custom field types, like numbers, select lists, short or long text, radio buttons, user pickers etc. These are added by you, or some apps will add the ones they need.
Custom field types provided by apps. Some apps add field types that work differently to the custom fields that are built-in (The obvious example for me is that Scriptrunner adds "scripted fields" to Server/DC installs)

In the first case, with system fields, the short answer is "ignore them". You can't change them, beyond using screens and field configuration to hide them or make them mandatory, so you can effectively ignore them during a migration.

With the custom fields, whether provided by apps, or the Jira platform, you have a simple list - go to admin -> issues -> custom fields. Both internal and external fields appear there. It's up to your admins if they have put in a description though. You'll need to ask the humans using the field what it is for if there is no clear description.

So... I don't think you answered the question. Where is the list of fields with descriptions? I have the same questions for Jira (data center) v8.20.12. My team wants to add some fields to the Story issue type, and we need to know if there are existing fields we can leverage or if we need to create custom fields. Thanks.
