Is it possible for the rest api to return the issue type of a ticket among the other fields? I'm using this endpoint at the moment:
I can't quite find anything online relating to this, so I'm hoping the community has some answers. Thank you!

It seems like the information is within the documentation link you provided, under the details of Request > Query parameters > fields
You should be able to set that parameter to *all to get all fields, including issue type, or refine the parameter to get just the fields you want.
