How can I define, that 2 Users see only 2 projects from 5. See only assigned tasks  and sub-tasks from the authors?

Another question: Is there an app in the marketplace which be helpfull for my requirements?

To limit people to projects, you will need to amend the permissions for the projects you don't want them to see, removing whatever it is that allows them to "browse project".  While doing that, you'll probably need to think about how you let the other people who should retain access back in.
