Following an internal reorganization my boss now has three teams reporting to him. Each of these teams has its own JIRA project. I need a way to link all of these projects to allow my boss, but also the entire team insight into what is being submitted and worked on. We considered creating new projects for each team with each beginning with a common acronym ("XYZ - "). Ideally this would be avoided to keep the process as seamless as possible for our requestors.
I also am looking into linking all of these with portfolio, but it is only in the testing phase for my company at the moment and therefore not ideal.

One way of doing it would be to create a Kanban board that shows issues from all three projects, you can then create swim lanes for each team.
