I am trying to create a JQL statement that will return only the Epics that an individual worked on in the last month. I do not need the specific issue(s) that an individual was assigned to, I just need the name of the epic that they contributed to.

Sadly you cannot achieve the desired search using standard features on Jira, you must go for a third-party app instead. Using i.e. JQL Booster Pack you can type the following:
1) Search for related Epics of issues in which an individual worked on (I suppose you use worklog feature to track this)
resolution IS NOT EMPTY AND issue NOT IN epicsOf(' "Epic Link" IS NOT EMPTY AND worklogAuthor = currentUser() AND worklogDate >= startOfMonth() ')
(*) Note that this is just an example, you must tune above query to fit your needs. e.g. Use issueFunction keyword instead of issue if you are using Script Runner, replace currentUser() with a given username instead...
