Currently, there are two bugs affecting the new issue view that is preventing the tables to work correctly:

Thank you for raising this question.

Our development team is still adding new features to the new issue view of JIRA, including some features of the Rich Text Editor available on the old view (Tables, quotes, etc).

Since only the new issue view is available on Next-Gen projects, I recommend you to watch and vote on the feature request below, so you will increase the priority of it and be aware of any new updates:
