My company uses Jira v8.20.1. I think its Jira Server. I have been given a task to which would need me to work with the REST API's of Jira.But I cannot install any kind of trial version to play around on my pc. I cant experiment on my companies Jira website due to obvious reasons (Or does JIRA perhaps provide a mode where whatever changes I make are not reflected on the companies website?I am confused as to where can one experiment before I go ahead and implement something on my companies account.

For playing around with the rest APIs you would need to get a server instance running .. One way would be to install docker and run https://github.com/cptactionhank/docker-atlassian-jira-software to get started
