I have another instance of JIRA whereby when I create an EPIC link, i just need to type the first letter of the Epic link in a story and a list of all possible EPIC links appears so I can very easily tag my epic to a story. However, now i just created a new dashboard, and new project and once I create an Epic, I cannot find it automatically populating in my story. I hope you can help me.

Looking at the second image (fields in the Epic issue type layout) and the third image (an Epic issue where you appear to have typed "FY" into the Epic Link field), I believe you have a misunderstanding about the use of Epics.
The issue hierarchy in Jira is
Epic
|-- standard level issues - i.e. Story, Bug, Task
|-- subtask level issues
The Epic Link field is used to indicate the parent Epic of a given issue. The issue hierarchy does no support making an Epic a parent of another Epic. An Epic can be a parent only to the issue types at the "standard issue level".
If you are attempting to fill in the Epic Link field for an issue at the standard issue level, then you should see a list of matching Epics.

thank you for your answer. It was difficult to show you what I meant, so I just typed FY to show that nothing else was being populated. In my other projects, I just typed the epic in a issue and it comes up and now here it does not work and cannot use the filter function for it. Not sure how better to describe.

Are you trying to fill in the Epic Link field in an issue that is itself an Epic? If so, that will not work.
Can you provide a screen image of a different issue type, like a Story or a Task, where you are trying to fill in the Epic link field and are not getting a list of possible matching Epics?

As I mentioned previously, the image you provided where the Epic Link field was blank appeared to be showing that you were trying to fill that field in an issue that itself was an Epic. That is not supported.
Please provide a screen image of another type of issue such as the ones shown in the Child Issue section of an Epic:
And show us what happens when you type "FY" into the Epic Link field of such an issue.

When I go into an issue, the same thing happen, i start typing the epic link and nothing comes up. My suspicion is that I did not set up correctly my project but cannot see where it is problematic.

I believe I have finally figured out the issue you are facing.
First, I did not notice this previously but your screen images tell me that you are working in a Team Managed project. Can you confirm this? What do you see at the bottom of the panel on the left when you are working in this project?
Example:
Second, if I am correct that you are working with a Team Managed project, then be advised that the native Epic Link field available in Company Managed projects can't be used in Team Managed projects.
Third, looking at this screen image you provided to examine the Epic Link field shown in it...
...the "Aa" symbol next to "Epic Link" indicates that the field is a "short text" field.
Somebody has added a custom short text field to your Team Managed project, and named the field "Epic Link".
That does not mean that the field can be used like the native "Epic Link" field in Company Managed projects, where the field is a search/select list for linking an issue to an actual Epic issue.
So, let us back up and address the actual problem you are trying to solve. If you want to add an issue to an Epic in a Team Managed project, you cannot do that by editing a field.

Hello @Trudy Claspill and thank you for your very thorough answer. You are correct about my project being in a team-managed project and I just checked the other project i was referring to, and it is in a Company Manager project...
I will check out the page you referenced below and see how I can adapt my project to work accordingly.
