How to remove the links  of Employee exit,New Employee,Purchase Request with Approval from the Help Center/Project Name and keep only the option of IT HELP? under the Project Name option.

All of the fields you have named are fields that have been added by your Jira admins, probably for some form of HR project.

You will need to talk to your admins about getting them removed from your projects (They do look wrong to me as well)
