From today morning we are facing sudden issue where we are not able to create tickets even though valid projects are present.
Project: Project is required.

One of your admins has added a field called "project" and set it as mandatory in the field configuration.
I strongly recommend that you get your admins to delete that field.
In general, you delete or rename any field that duplicates the name of any Jira system field (including never having any field with "status" in its name), and that includes "project", although the system project field is not really a field, it's structural and there is no way to leave it blank.
