I am creating a dashboard in Jira aiming to get a list of all closed subtasks ordered by assignee or order by closed by, however, a big discrepancy is being caused from team managed projects. Just for a context, we have few projects working in classic Jira template and remaining teams have team managed projects. Even after adding a custom field "closed by" into the team managed projects and setting up an automation for populating this field with name of the person who closed the subtask, this closed by doesn't show any user under it and as a result in filter results report in the dashboard I have lots of subtasks which show unassigned and no detail in closed by. I was wondering if I could get some insight on this matter please?

If I understand your question, you have a team-managed project with a People-type field named "closed by" and that is not showing with the dashboard gadgets.
That is not currently supported, and is one of several support gaps with the People-type field. Here is the open defect for this symptom, which you may vote for / watch to see progress:
