I got to know that in JIRA8 we get "Last issue update" field to get any idea about how actively the project is used.
Similarly do we have some thing from which we could come to know if custom fields are not used in any JIRA project and so we could delete them?

Atlassian has written an complete KB article to deal with the problem of unused or poorly used custom fields.
1.Go to issues -> Search for issues
2.Then type field which you want.(If this field used in any issue you can see this)

But doesn't that only show which fields are in use? If you have dozens, or worse, hundreds of fields, there is no way to reasonably use this to see which fields aren't on the list.
