We have sensitive content on most of our confluence pages that external contractors should not gain access too.
What is the simplest to allow e.g. a group called "externals" to only access whitelisted spaces and/or pages?
I've seen some cumbersome instructions that require remodeling of the existing users and groups, in order to facilitate the above-described scenario. I hope this is not the only way to solve the problem,

Hello Tim,
I'll assume that your external contractors are already licensed Confluence users, and that you are using Cloud.
You can configure Confluence this way so they can only access certain groups:
This is likely the configuration you were referring to, but this is indeed the way to do it.
