If you want to use Cloud Confluence, then you get the latest version. Cloud is almost always ahead of Server and you have no say over the version. A trial will simply expire after 7 days if you don't pay.
For server, have a look at the downloads page and look for the "archive versions" link. You'll be able to download any previous version. Your trial will last a month.
