How to display ALL Issues in an Epic -

I can currently only see 7 issues listed when there are over 30 for an epic

Community moderators have prevented the ability to post new comments.

You can Hide Epics Panel and Hide Epics Labels. Make sure that setting is not wrong on the right hand side of the tool bar under the Board bar.

On the left, you can see the all the EPICS from the ferst button.

Also, make sure you don't have a wrong filter taking all the goods so to speak from your data query.
