I have 3 Epics with the following names:
I would have expect the start date for Epic 2 to become the end date of Epic 1
This does not happen.
How do you make it work?
Or do you just have to manually enter start dates the align with the dependency?

Hi @Alan Bell and welcome to the community!
In case of dependencies with a planning conflict, a decision needs to be made. Either you try to complete Epic 1 earlier, or you delay Epic 2 (or you think of a clever alternative to eliminate the dependency).
Jira doesn't make that decision for you. Which I personally appreciate a lot. Many factors can come i to play making such a decision. Maybe different teams are responsible for Epic 1 and Epic 2: in that case a dialogue needs to take place.
Advanced roadmaps helps to identify and track planning conflicts; bit it doesn't step in.
Kind regards Rik
I agree with Rik :)

I agree with you in general but if I make a dependency I would expect it to honor that.

Probably, try Jira automation ..1) using the link relation to pickup date 2) update epic start date..
