is there a way to save a Trello board onto my laptop so I can access it when WIFI is down? Perhaps copying the contents into a word file?

Trello Web and Desktop require an active internet connection, however in our mobile apps we do offer offline capabilities. Maybe one of these versions is the better choice when working without an active connection.
You can of course copy contents or export a board to json (or csv if you are using Business Class) for offline access: https://help.trello.com/article/747-exporting-data-from-trello-1
