I would like to invite my staff to tasks I create without them being able to see other cards that have personnel sensitive information. If I invite staff members to my Trello account, what can they see? Do they see everything I have on all of my cards or do I have to invite them to a card before they can see anything?

I'm afraid this isn't possible. As per the help docs (https://help.trello.com/article/807-adding-a-member-to-a-card)

Can I add a member to a card without adding them to the board?

No. In order to add a member to a card, that user will need to be a member of the board first.

Because Trello aims to provide users with a shared perspective, once someone is added as a member of a board, they'll be able to see all cards and lists on that board, not only the cards they've been added to. Sometimes, users may want to only give another member access to some cards but not others. In those cases, we suggest creating separate boards for different levels of access.
