Hi,
We're planning to move to the paid version and question the model that suits us best. Preliminary we thought that Premium model could be our choice.
But, we have over ten workspaces used currently with a concept that every team has a separate workspace. We can use collections to easily group boards together within one workspace, as far as we understand.
Are there any limitations on how many collections can be created within one workspace? And is it any limitation on collection regarding how many boards can be added?

There are no limitations to how many Collections you can have. Tbh we should probably make Collections free so people don’t have to “do work” to move boards into the right model when they upgrade but using Workspaces as “board folders” isn’t how we see them being used. So it will be better to combine them into one Workspace.

To confirm, please: since we'll use only one workspace in the future, and currently, it is not possible to move more than ten boards from different workspaces, are we be able to do that once the Premium account is set? So again, I'm questioning boards from different workspaces needed to be added.

Yes. Pick one workspace to upgrade to Premium. Once it is upgraded it can hold unlimited boards.
