I've checked on this with our team and they've let me know that the taskbar icon should be installed at the time the app is installed (via installer that comes from the Microsoft store).
We'd recommend uninstalling and reinstalling the app to see if that fixes the icon. If it doesn't, could you please get back in touch via https://trello.com/contact so we can take another look? Thanks!
