...problem is that Slack is picking up a REALLY old Trello board which I'm not even on anymore. I've removed the old board and am trying to connect to a newer board for which I am an admin. Any ideas on how to make this work are appreciated!

The important detail is that Slack needs to connect to a Trello team, and then you can link boards to channels from there.
Are you an admin on the team you're trying to link to?
