Remove Custom Field from a Specific Card

I am attempting to use custom fields to set up a board similiar to the one displayed in a recent Trello blog post: https://trello.com/b/M0YqG8f0/daily-habits-goals-tracker.  (You'll need to open the daily journal entry to see this and can open others to compare.) In that post the daily journal entries have fields for tracking habits that aren't applicable to any other cards on the board.  I cannot make this happen. The custom fields display on all my cards across the board. I have set them so they don't display on the front of the card - nevertheless they are there when I open the card.

In this video:  https://www.youtube.com/watch?v=0_pKe0zu3oc  the narrator shows a list (In Progress) where he has added colored custom fields to note priority levels but these don't show on other cards.  In my Trello if I set it for display on front it is on all cards, if I uncheck the box it is absent from all card fronts but still on all cards.

I saw a response in the questions I think from Dean to Matthew that is stating this is impossible as Custom Fields are board specific and yet, clearly in both this video and the blog posts they are not showing on all cards.    SO I don't care if I have to hide them or something, I just want to replicate this.  I have multiple applications for this ability and it is very frustrating to see it and not be able to do it. He even talks about changing the button name, I can't do that either. (That might be in a different tutorial, he has a few).  Is there an upgrade for Custom Fields or something I'm missing???

It is true that once a Custom Field has been defined for a board, it will show up on every single card in this board - whether it gets a value or not.

I don't know how these videos you are referring to have been made. Boards could have been edited and the videos cut, leaving a wrong impression how it works.

But generally speaking, that custom fields are a status quo for each card once it has been defined. That is so.

Something to do with viewing on iOS versus desktop, and being a member vs. observer of the board (where fields with no value will not be shown).
