If I have assigned a task to a team member for a given week, and want to assign he/she a second task during the same week, will there be a notification from Trello signalling that this member is already working on a task? Just so we can be reminded of each member's to do list and deadlines.
Does that also work if both tasks pertain to different boards?

Trello doesn't have any behavior like that currently, no. When assigning a person to a card, that can be done for as many cards as you like, but there wouldn't be any warning they are already on other cards.
One option you could use is to filter for any cards assigned to that person first. Then if no results are returned, you could assign them to the new card: https://help.trello.com/article/787-filtering-search-cards-on-a-board
