I just found the change that made this happen - we definitely changed this, as part of a fix. Previously, the current behavior (which is correct, based on the markdown spec), was only applied to comments.
The fix that was sent out yesterday, meant that this is now also the case for descriptions, which is why your existing cards have changed formatting.

I work with Dave, so I used his example several of us are seeing this, I have tested it in Google Chrome, Safari, and Brave browsers. All with same results. However, I do use the Apple Trello App and it appears as expected.

I can't immediately see any change to our markdown implementation in a while.
The example you posted renders correctly, because the dashes underneath a line signify a "Heading 2" in markdown.
If you want the horizontal rule, you'll need to break up the lines with newlines, like:
**Test:** Test
---
**Line 1** Test
---
**Date Line 2:** 5/17/21 - M ST

What I find odd is that all cards across all my boards just started to do this last night. So all old cards and all new cards all the way back for several years are affected. Which wasn't that way at 3pm MT time but was at 6pm MT. That doesn't sound like it is a return problem.
