Hi David, 

I don't think this is currently possible. I had a thought that you could maybe restrict the Trello user in JIRA to only access certain projects, but didn't come up with any positive results on that test.

Thanks Meg,  I ended up restricting permissions for the JIRA user associated with the Trello board to a single project and that met my needs.
