When I set a due date for a task, "set due date reminder" has recently started defaulting to
"1 Day Before".
Now I never want reminders from Trello - especially not on Sunday for Monday deadlines, I want a weekend!
It's a real pain to have to change it to "no reminder" every single time!
Is there a way to change the default (back) to "no reminder"?

For now, there isn't a way to change the default setting to "no reminder". You need to choose it manually.
But I can pass your interest in this on to our team for consideration, although we can't guarantee it will be implemented.
A suggestion, in case that works for you, is to create an automation card button to set a specific range of due date. You can explore this alternative option on your board by going to automation > buttons > card buttons. In the action type you can choose "dates".
