The date a card is archived is tracked on that card, so that data is accessible via the board's activity feed. If you need to access that programmatically, you can get that via Trello's API: https://developers.trello.com
Depending on what you're doing, you might also look at Zapier, which is a third-party service that connects various applications without any coding. They might have a connection already that would work for you, letting you watch for card updates like being archived, and then recording that however you need.
