When I define Custom Fields, they appear on all cards. Is there a way to limit them to certain cards? Or do I need another Power-Up for this?
The Amazing Fields power up allows you to do this. (https://trello.com/power-ups/60e068efb294647187bbe4f5) It also allows you to configure different user rights about who can edit the fields along with extensive support for styling field values.
It doesn't have the full power of custom fields for automation, but it can work pretty well a lot of use cases.

@sassostefano unfortunately i believe it will appear on all the cards. You can toggle if you want it to show on the front of cards or not, but whatever you set will apply to all cards. Although i haven't played with it much, it looks like you can set which fields appear on which cards with the Amazing Fields Power-Up: https://trello.com/power-ups/60e068efb294647187bbe4f5
