Custom fields is available with the standard product. We had tested out Premium and noted we didnt need this, however we were charged for premium. I ask to be refunded from premium and downgraded back to standard and now all our custom fields are missing!

you'll probably want to reach out to Trello support for questions like these. Atlassian Community is the public forum, so you're less likely to get help specific to your account.
I did manage to find your ticket requesting a refund and track down your workspace in our support tooling. It seems like we cancelled and refunded your Premium subscription, but your workspace is now "Trello Free" and that's why it doesn't show custom fields.
Don't worry, the fields and data are still there! If you re-subscribe to Trello Standard, they should show back up on all the boards you had them configured previously.
