How to change which status to consider "done" for reports

For the purposes of the next-gen jira reports (burn down, velocity, etc) i want to consider issues done when they hit a status column that isn't the last one.  For example, our last column is a "is it in production" but our team's done state is a few columns left of that.  Calculating velocity, burn downs, etc doesn't work because they're only considered when in the last column.

There's no way to do this.  Jira simply considers the last column on a board as done.
