Is it proper to say , use this once and delete the other once , or is it say use these ones and delete the other ones

It might be, but you have not given us any context to frame the question, so we do not know what you are asking about.

Use this once = use this thing one time

Delete the other once = Delete this thing one time (this probably doesn't make sense)

Use these ones = use these things over here. 

Delete the other ones = delete the other things over there. 

 

I think your second combination is the only one that makes any sense, although you can just say "Use these and delete the other ones."
