The most common way would be to download Confluence and host it yourself. If you want to stick with a "cloud"/hosted version, you can enter a support request and we can discuss the details of having your instance hosted by a 3rd party company.
Are there alternative Confluence versions other than OnDemand that would allow me to utilize more plugins? If so, what are they?

Yes, which is the standalone edition. You will need to have your own environment to install it.

OnDemand comes with a set of bundled plugins and it is currently limited to those plugins. A list of the plugins included in the bundle as well as the OnDemand plugin policy (with a note about future plans) is at the link below.
