My team is leading is leaving and I want to make sure he didnt miss anything up. He had admin access I want to change to read and wrtie only

You'll need to look at the permission schemes, but generally, if you remove him from all the groups, that will remove most of his access.  Then have a look through the projects to see if he's named as a project lead or an admin user in a role
