Managing Client review

I would like some advice on how to manage client sign off in JIRA. Currently the workflow we have defined a task as “done” when our customers are happy for the task to go to live.

However this leaves our sprints (2-weekly) with multiple “incomplete” tasks awaiting client sign off, leaving us either filling up follow up sprints with “pending client approval” tasks.

I am wondering of there is another way to approach this process and I would welcome any advice from similar processes
