LDAP user missing after synchronised

1. I am using an evaluation license, but I don't see any issues.

2. I have total over 7000+ users imported by JIRA automatically after I add the AD.

I found one (maybe more) from the Office AD not has been created in JIRA, so the user can't login. Is there a log created during the synchronization?

You can increase the logging levels for the sychronization by setting com.atlassian.crowd.directory to DEBUG. But you should check if the user who is not getting synchronized is falling under the scope of the filter applied for the AD configuration.
