I created a custom field called Customer with option values I can add our customer names to in order to more accurately identify the source of an Issue, but I would like to expand that so I can access a full-fledged Customer table with more detailed information (such as customer city and state). Is there a way?
Not that I'm aware of.
As Atlassian mature their Remote Application interface at some point users should be able to consume data from outside the ondemand system. When that is available you could have the custom fields being filled in via external data from web services etc..
But at this stage I don't believe there would be anyway to modify actual database tables
