I'm wondering if we can add new customfield options via jemh. For example populate a selection list value of customers from email prefix and client contact from email addresses?
Just to clarify I'm not asking about updating customfield values but it's options.

No, JEMH doesn't support configuration of JIRA remotely by email, it's function is to enable manipulation of how an issue is created, ie selecting an issue fields 'options', not defining what they are actually.
