We have a subscription to Atlassian University including both JIRA and Confluence courses yet only Confluence courses are showing. So 2 part question here:
1) How do you access the admin console (I am an admin for both Confluence/JIRA/CROWD but do not see the option to designate an Atlassian Univ admin)
2) Is the admin console where you designate the available courses? (Assuming there is a box to check to make the JIRA courses available)
The best thing to do is file a ticket (by emailing email@example.com) like you did.
I don't want to talk about your personal account stuff stuff here, but by default the tech contact on the purchase is listed as an admin. You can log in through that admin console and add other admins. By default, all courses show up, but as an admin you can delete versions of the course that your customers are not using.
