addon-com.okapya.jira.checklist: I would like to know whether it is feasible to have the 'check/uncheck' event actually record the details in the History/activity of the corresponding issue, instead of just recording 'User updated issue'?

Sorry, I didn't get notified of your questions since it didn't have the proper tag. The history tab will provide you what what actually changed in Checklist but the Activity tab is purely controlled by JIRA so Checklist cannot modify this field or add more details.
