I didn't realize billing starts automatically after I activated the free trial. I don't need to do this evaluation right now. If I disable the add-on, does that mean the Tempo Timesheets won't bill me if I continue my Jira subscription after that trial period ends?

this depends if you are using the downloaded version of Tempo or are OnDemand.
If you are using the downloaded version, no further steps are necessary. Tempo will stop working but you will not loose any data.
If you are using the OnDemand version, At the end of your 30-day trial period, you will be billed for your Tempo subscription unless you opt out or contact Atlassian’s sales team (sales@atlassian.com) to ask for an extension of your evaluation.
