JIRA Custom Fields in JEMH

Hi

I've got a trial license of JEMH and am trying to follow https://thepluginpeople.atlassian.net/wiki/display/JEMH/Configure+JEMH+for+a+Helpdesk+environment+from+scratch

After creating the Custom Field 'Email Users' (is TEXT multiline the correct type?), JIRA asks me to associated the custom field with a screen. There's no reference to this is the wiki guide document. Should I just add the field to all screens?

Also, am I going to run into problems running JIRA 6.1 Is it fully supported yet? What issues might I encounter?
