I would like to know if it is possible to use multiple filters? For example, by project, by release and then by component?

Did you try contacting the authors of that plugin, by clicking on the Support and Issues link? :)
Actually there are 2 such plugins, under the similar keyword "ganttchart"... The other one is located at this url.
