How do you get stattable fields enabled?

The documentation is pretty lack luster and I can't find where to even turn these on.  I'm trying to have a custom number field aggregated in my two dimensional search widget.  No luck.

For convenience all Stattable Searchers have (stats) in their name , so it should be easy to find the correct one for your cascading custom field.
